My favorite pho at my favorite Vietnamese restaurant is bun bo hue.
According to the server at this family restaurant that I visit weekly, bun is the type of noodle -- thick and round, like spaghetti but smooth and white -- and bo hue denotes the region the style of noodle soup comes from.
In addition to thin slices of rare beef, bun bo hue also has pork cake and is usually very spicy -- I always ask for it served plain and I add chilly oil to taste -- and with lots of been sprouts and basil.
